Thanks to the lovely Tracey of The Lemon Kitchen, I had the opportunity to try some of the new Caramilk Cream Liquor. Think Baileys meets chocolate bar…. yum! And while it is a lovely addition to hot chocolate, coffee, white russians or other mix drinks (and comes in cooler form for those who do not care to mix their own drink) it also makes a wonderful addition to sugar cookies!
I got the idea for this recipe from cookies that a friend’s sister used to make. She would take sugar cookie batter and insert a square of caramilk chocolate in the centre and bake them. This is kind of my play on those awesome cookies.
Caramilk Sugar Cookies
1 cup room temperature butter
1 1/2 cup sugar
1 TSP vanilla
1/2 cup Caramilk Cream Liquor
4 cups flour – I used whole wheat but all purpose would be fine
1/2 TSP salt
3 TSP baking powder
Cream butter and sugar using a hand mixer until combined. Add Caramilk liquor, vanilla and egg – continue to blend.
Add salt and baking powder and flour one cup at a time, mixing well with each additional cup of flour.
Wrap bowl with plastic wrap and allow to sit in the fridge for at least two hours. Then roll and cut into shapes.
Preheat your oven to 350 degrees. Bake cookies on a parchment lined baking sheet for 6-8 minutes until golden brown around the edges.
